Vitamin D

Vitamin D There are a good number of sources pointing toward Vitamin D as a vital resource needed by your body for optimal health. Many of these articles discuss deficiencies of this vitamin.

I feel fairly confident that this type of deficiency has never befallen me because I've always eaten healthy portions of mushrooms, many of which are known to be great sources of Vitamin D. There are even ways to boost the Vitamin D content of mushrooms before eating them, by placing them in sunlight before consumption. A good heap of research has been done to link Seasonal Affective Disorder to Vitamin D deficiency as well, which is yet another good reason to ensure that you are getting your proper dose of mushrooms.

Ginger Berry and Oat Breakfast Smoothie

Ingredients:
¼cup old-fashioned rolled oats
½cup frozen blueberries
½cup plain low-fat yogurt
½cup ice
2 tablespoons brown sugar (I skip this one)
¼ to ½ teaspoon grated fresh ginger
(I always add spinach or Kale to almost all my smoothies)

Directions:
Place the oats and ½ cup water in a blender.
Let soak until the oats have softened, about 15 minutes.
Add the blueberries, yogurt, ice, sugar, and ginger.
Blend until smooth and frothy.

Peanut Butter Banana Oatmeal Smoothie

This is an amazing breakfast smoothie! It has a thick creamy texture and is easy going down. It is filling and does not leave you craving for more protein or food several hours after. This smoothie is packed with protein and iron, Vitamins A, B-6, C, D, E, calcium, folate, riboflavin, and other essential minerals, nutrients and vitamins. Accompanied by an extensive list of benefits to your health and morning by adding a healthy breakfast to your lifestyle.

Peanut Butter Banana Oatmeal Smoothie
Ingredients
1/2 cup Almond Milk
1/4 cup Steel Cut Oats, soaked overnight
1 tbsp Chia Seeds, soaked with the oats
1 Banana
2 tbsp Natural peanut butter

Optional: 1 tbsp coconut oil, a dash of cinnamon, spinach/kale, ground flax seed, hemp seeds

Instructions
The night before, put your oats and chia seeds in a bowl and cover with water. Place in the fridge to soak overnight, or for at least two hours. Place all ingredients in the blender in the order listed and blend until smooth and creamy. Pour into a glass, sprinkle with chia seeds or banana slices and enjoy!

You could use a full frozen banana. If you are using a full regular banana, I would add a few ice cubes, but the smoothie might be a little more watery.

Hello everyone and welcome! I have decided to start a new blog for the purpose of sharing my journey toward living a healthy and happy lifestyle. This blog will be dedicated to highlighting the bright spots that life has to offer and toward helping others in myriad ways.

I'll focus on sharing some healthy recipes, smoothie recipes, exercise tidbits, natural living notes and other random bits and pieces I come across that might brighten a day or aid in a journey toward healthy living.

As far as the title of this blog goes, it's true that we are all made of stardust, the matter that comprises our bodies is billions of years old, we are but a vessel carrying it forward for the briefest of flickers in the grand scheme of the cosmos and thus, we've a limited time to make the best of this life, if I can somehow offer something that might make your journey just a tad brighter, then that's enough for me.

It is also the theme of a song I wrote called "Full of Stars," the lyrics and video of which follow.
